Since swearing off meat nearly 18 months ago, I am always on the hunt for pretty cookbooks {visuals are a big seller with me} that take the mystery out of vegetarian cooking. In the last year, I’ve been introduced to more whole grains than you can shake a stick at. Quinoa, farro, wheat berries and barley are all regulars in my cooking vocabulary now. Some recipes are great, others not so much. I feel lucky that I stumbled upon the wonderful blog of Virginia Willis where she previewed 3 recipes from the beautifully photographed cookbook Ancient Grains for Modern Meals by Maria Speck. For me, this will be a cookbook with which I do a lot more than look a stunning pictures! I especially love summer dinners that can be made in the morning, before it gets too hot for the stove, and then served at room temperature.
