Every once in a while I need a quick fix for dinner. This Meatless Monday Nella Pasta came to the rescue. I recently discovered the brand at a Volante Farms beautifully renovated location in Needham, Ma.
Started by two women with a purpose and a passion for pasta, cofounders Leigh and Rachel create delicious pasta only using ingredients from neighboring farms. Their name translates to in the in Italian, because everything that goes into the pasta is of special importance. Ingredients are picked fresh and grown with organic practices. Their offerings change with the seasons, insuring that ingredients are farm fresh.
This fall look for smoked mozzarella, white bean and sage; kale and currant; roasted winter squash and sage and finally mushroom duxelles ravioli. I was lucky enough to try some of the roasted beet and goat cheese before the change of seasons. All I can say is heavenly....
Paired with a touch of good quality EVOO and a salad, it was a perfect meal.
